Ayam Lada Hitam



Bahan-bahan nya
1 ekor ayam dipotong ikut suka dan dibersihkan
1 biji bawang merah dipotong 4
1 ulas bawang putih dicincang
sedikit halia dihiris
1 pokok daun bawang(dipotong 1" memanjang)
1 sudu teh tepung jagung digaul dengan 1/2 cawan air
minyak untuk menggoreng.

untuk sos
1 sudu besar lada hitam
1 sudu besar sos tiram
1/2 sudu teh kicap pekat
1/2 sudu teh kicap masin

Cara cara nya
1. Satukan bahan bahan sos dan ketepikan

2. Goreng ayam hingga warna keemasan,ketepikan.

3. Menggunakan kuali yang sama(tapi kurangkan minyak),tumis bawang putih dan halia hingga wangi.

4. Masukkan sos yang disiapkan awal tadi,masak hingga mendidih.

5. Masukkan ayam,bawang merah dan air tepung jagung dan masak seketika.

6. Sebelum matikan api,masukkan daun bawang dan siap untuk disajikan

Anda juga bole menggunakan sayuran yang anda gemari.

Mango salad



Ingredients
1 unripe mango
3 shallots sliced
1/2 cup coriander leaves(chopped)
2 tbsp roasted peanut roughly chopped
100gm dried prawn wash,rinse and roasted
1 fresh-cut red chili(optional)

For salad dressing
1 tbsp fish sauce
1/2 or whole lime
1 tbsp or more palm sugar
1 tbsp of hot chili
1 tbsp vinegar


Method
1. Grate the flesh of the mangoes into a mixing bowl.

2. Add shallot,dried prawn and chopped peanut

3. Pour the dressing and toss lightly



for dressings
Add chili,sugar,vinegar,fish sauce and lime juice,stir till the sugar dissolve

p/s:can add roasted coconut to the salad if desired

Tom Yam chicken


Ingredients
450gm chicken meat(diced or sliced)
500mls chicken stock
100gm button mushroom(sliced half)
1 stalk of lemon grass, crushed and cut into short pieces
15 crushed hot chilies
4 shallots(sliced)
3 thin slices of Galangal (Blue ginger)
5 kaffir lime leaves
2 tbsp coriander leaves
2 tbsp lime juice
1 tbsp fish sauce

Method
1. Place the chicken stock in a pot over medium heat and add the lemon grass, kaffir lime leaves torn into pieces and chilies.

2. When the water has come to a good boil, add the diced chicken and the mushrooms.

3. Add fish sauce and lime juice to taste, sprinkle with coriander leafs, and serve hot.

*To enhance the flavour, sometimes Nam Phrik Phao (roasted chilli paste) is added into the soup before it is removed from the heat.

kek Pandan chiffon



Bahan bahan nya
8 biji telur(asingkan putih dan kuning)
8 oz gula pasir
8 oz tepung gandum
5 oz air pandan(daun pandan yang dikisar halus dan diambil air)
3 oz minyak jagung
1/2 sudu kecil garam
1/2 sudu kecil cream of tartar
1/2 sudu kecil baking powder
1/2 sudu teh vanilla
*anda bole gantikan air pandan kepada pandan paste

Cara-cara nya
1.Masukkan kuning telur,tepung gandum,vanilla,garam,baking powder dan 1/2 bahagian gula kedalam mangkuk dan kacau rata.

2.Masukkan minyak jagung dan air pandan dan dikacau hingga sebati,ketepikan

3.Pukul putih telur bersama cream of tartar dan masukkan gula sedikit demi sedikit,pukul hingga kental.

4.Masukkan adunan putih telur kedalam adunan tepung dan digaul hingga sebati.

5.Tuang kedalam acuan chiffon dan bakar hingga masak

6.Tempreture 170C-180C,bakar selama 40-45 minit

Please note:adunan ini agak muai,jadi saya menggunakan acuan empat persegi kerana acuan chiffon saya agak kecil.

Butter cake 2


Ingredients
250 gm
200 gm sugar
4 eggs
250 self-raising flour
2 tsp vanilla essence
about 6 tbsp milk

Method
1. Heat oven to 180 deg C. Line cake tin.

2. In a mixer, beat butter and sugar on high speed till pale and fluffy, Reduce speed to medium, and add vanilla essence.

3. Add in eggs one at a time, alternating with flour.

4. Add milk to batter(bit by bit)

5. Check the consistency of the batter. It should be of dropping consistency. If it stands peaking and hard, add more milk.

6. Pour into baking tin and bake for about 50 minutes.

Butter cake 1



Ingredients
250gm butter
190gm sugar
5 eggs
210gm hong kong flour or all purpose flour
1/2 tsp baking powder
1 tsp essence vanilla

Method
1. Place butter,sugar and vanilla in a mixing bowl.

2. Cream till light and fluffy.

3. Add in eggs one at a time and mix it evenly

4. Cream the batter till smooth and light.

5. Pour the batter in a cake baking tin and bake it 170C-180C(pending on individual oven)for 50 minutes or till cook(when you insert knife and comes out clean).

6. Leave on wire rack to cool.
